I love making our Christmas morning breakfast extra special but I also do not want to be stressed about getting up early or being preoccupied cooking when I could be cuddling my little elves and reading the story of our Saviors’ birth before opening gifts. My mom’s Christmas breakfast casserole is PERFECT for mornings like this. Add some bell peppers or green onions for a pop of flavor and festive color!
With family in 3 different states, this Christmas we will end up having 4 different family Christmas celebrations! Our own little family of four celebrated our “Christmas” morning this past weekend because we love having that cozy time as just us on a Christmas morning. The kids don’t care about the date, they are happy to celebrate any day!

As the kids opened stockings I finished getting coffee made and breakfast on the table. This easy Christmas breakfast casserole makes it low stress and easy clean up. Serve it with fruit and some pasties if you like!
Christmas Breakfast Casserole Recipe
- 1-2 lbs of your favorite sausage
- 1 bag frozen, shredded hash browns
- 8 eggs
- 2 cups shredded cheese
- 2 cups milk
- 1 red pepper (optional)
- 2 stalks of chopped green onion (optional, I used a green pepper this time)
- 1/4 garlic powder
- 1/4 onion powder
- salt and pepper to taste
- In a large skillet cook sausage throughly. Set aside to cool.
- Place frozen hash browns in the bottom of a 9×13 pan.
- Sprinkle sausage on top of hash browns.
- Beat eggs, milk, garlic, onion powder, salt and pepper in a large bowl and pour over the hash browns and sausage.
- Sprinkle cheese and colorful bell peppers (or green onions) on top of casserole.
- Bake at 350 for about 40 minutes (45 minutes if baking cold from fridge).
Note: If making the night before, allow sausage to cool completely before adding to casserole. Cover the dish tightly and store in fridge. You may want to wait and add the peppers or green onion on top in the morning, I actually used frozen (pre-chopped) red and green peppers and threw them on right before baking.
This recipe is super simple and easy to adapt. Add bacon, use your favorite cheeses, throw in some different veggies and make it your own way!
This little Christmas Elf sure loved her Christmas breakfast casserole. I think she had 3 helpings before we cut her off.
