Everyone loves a party! St. Patrick's Day is a fun holiday to celebrate by hosting a cute kid's party and play date with friends! I love hosting friends especially when it allows my kids to play with their friends too. St. Patrick's Day isn't a huge holiday, but we like to enjoy some yummy kid-friendly treats and delicious limeade, and let the mommies catch up and the kiddos play! Here are some yummy snack and treat ideas for a Shamrock kids' play group (or any kids' party)!
Avocado Pita Shamrocks are easy to make and a no-sugar healthy snack too. To make these, cut pita bread shapes using a cookie cutter and spread on a layer of hummus. Top your pita Shamrocks with a piece of avocado. A fun snack for moms and kids!
Simple Kid-Friendly Cupcakes are easy to make and your kids can help mix the batter and fill the cupcake papers. My daughter loves helping with baking any chance she gets. I generally use a boxed cake mix to make cupcakes, but you could easily whip up your own cake mix too. I would imagine it would take me a few rounds of practice to achieve the same universal results offered by a boxed cake mix, but practice makes perfect! Cupcakes are fun to decorate any way you'd like with colored icing and sprinkles that match your party theme. I chose white frosting with green sprinkles for our kids' St. Patrick's Day party, simple and classic.
These jiggly cubes of color are a project in itself, but if made the day before they are a breeze to serve at your kids' party and kids will think colorful Jell-O squares are so much fun! All you need to make these Jell-O cubes is several colors of Jell-O, plain gelatin, sweetened condensed milk, and several hours of patience.
Spray a 9x13 in. baking dish with cooking spray.
In a small bowl, mix together one package flavored Jell-O and one envelope unflavored gelatin. Stir in 1 cup boiling water until dissolved. Allow to cool slightly for 3-5 minutes. Pour mixture into the baking dish and refrigerate about 25 minutes until set but not firm.
In small bowl, combine the sweetened condensed milk and 1 cup boiling water. In another bowl, sprinkle two envelopes unflavored gelatin over cold water and allow it to sit for 1 minute. Stir in 3/4 cup boiling water and add this mixture to the sweetened condensed milk mixture.
Spoon 1 cup of the creamy gelatin mixture over the first flavored gelatin layer. Refrigerate about 25 minutes until set but not firm.
Repeat all these steps for each color of flavored Jell-O, alternating with creamy gelatin layers. Don't pour on the layers, or the pressure from pouring may puncture the previous layer below. Allow each layer to set before adding the next layer, about 25 minutes.
Make sure to let the dissolved gelatin sit for a few minutes before spooning over the previous layer. This will keep the layers "pure". If you go too fast, the new color of Jell-O will bleed into previous layers, ruining the layered effect.
Chill each layer until set but not firm before spooning the next layer on top. Use exact measurements for each layer to keep the colored and creamy Jell-O layers even, which creates the cool rainbow cube look.
Refrigerate for at least 2 hours after adding the last layer of Jell-O, and then cut the rainbow cubes into small squares.
