Do you want to build a snowman, or a gingerbread ice castle? We did! Our family has been staying cozy indoors and we needed a fun DIY project. With temperatures in the single digest outside, it's hard to do much of anything! My girls have been enjoying short romps in the snow followed by a warm mug of hot chocolate, and today we built a Frozen inspired gingerbread ice castle perfect for a snow queen! I baked the gingerbread the night before so it had time to fully cool. I made some pretty thick sheets, which I then cut into shapes while it was still warm. My gingerbread shapes cooled and hardened overnight, creating the perfect building blocks for our fun DIY gingerbread ice palace!
I iced each gingerbread shape individually and used whipped egg white frosting for the "glue", which is my favorite type of frosting for gingerbread houses because the egg really sticks the gingerbread shapes and candy accents together! We decorated our homemade gingerbread ice palace with some small candies. I tried to find a variety in white, with some colorful accent candies. I ended up selecting marshmallows, white chocolate pretzels, mini white chocolate Kit Kat bars, Sweetarts, and some kind of gummy sour candy. I wanted to make sure this project was easy enough for my 4-year-old to help with, so we didn't get too intricate with the candy design decorations. Once the gingerbread ice castle was built, it was fun to decorate with candy accents!
Our gingerbread ice castle is made from sheets of gingerbread, iced with egg white frosting. I wanted to give it a snowy look with shards of ice decorating the multi-tiered levels.
Egg white frosting is the perfect glue to stick our gingerbread ice palace together! My daughter had so much fun helping with this project. She loves doing creative and crafty projects.
As a finishing touch, I added some buttercream frosting flowers made with my Russian Piping Tips, a super cool way to decorate your baked goods with beautiful flowers or "snowflakes". Elsa looks pretty happy in her edible ice palace made entirely from gingerbread! I hope you enjoyed our fun project, we sure did!
